broil it. Any kind of fish can be used for this - either the
soft kind like Tilapia, catfish etc or the firmer ones like
king fish, salmon etc. It

Preparation :
Any kind of
fish can be used for this - either the soft kind like Tilapia,
catfish etc or the firmer ones like king fish, salmon etc.
Clean and cut the fish into pieces or use smaller fillets
without cutting (like the 4oz fillets). If using fish with soft
skin on (the kind that doesn't require skinning), Make shallow
cut marks about 1 inch apart on both sides of large pieces to
make sure the marinade seeps through.
Make a thin paste of the spice
powders, garlic paste/powder and salt in little water. The
lemon-pepper powder gives the fish a nice citrus taste
- this is especially good for grilled fish.
Coat the fish
pieces with this spice paste and marinate for 1/2 hour to 1
hour.
Shallow fry, grill or broil
the fish till the fish flakes easily.
Serve hot with
rice.
