Here is
the recipe for a healthy
stir fry of fresh crisp string beans. It goes well with
rice.

Ingredients : |
|
|
Fresh String
beans |
1 large bunch |
Mustard
|
1 tsp |
|
Green
chillies |
½ cup
|
Curry leaves |
1 sprig |
|
Turmeric
Powder |
¼ tsp |
Salt |
to taste |
|
Dried
Red Chillies |
3 nos |
Oil |
1 tbsp |

Preparation : |

-
Cut up string
beans into 1 inch pieces and slit green chillies in halves.
-
Heat oil in a wide
skillet and add mustard seeds.
-
After the mustard
pops, add dried red chillies (cut in halves) and curry leaves.
-
When the dried
chillies change color to dark brownish red, add the cut beans
and green chillies.
-
Add turmeric and
salt and mix well. Turmeric is added to keep the color of the
beans.
-
Cover and cook for
3 or 4 mins.
-
Remove lid and
stir well and cook till beans are cooked – beans should be a
little crispy and not overcooked.

Serve hot with rice.
