Recipes - Veggies - Dry

 
 
 

Here is the recipe for a healthy stir fry of fresh crisp string beans. It goes well with rice.

Ingredients :

 
Fresh String beans 1 large bunch Mustard

1 tsp

Green chillies ½ cup Curry leaves

1 sprig

Turmeric Powder ¼ tsp Salt

to taste

Dried Red Chillies

3 nos

Oil

1 tbsp

     

 

 
     
     
 
     
 
   

 

 

Preparation :

 
  • Cut up string beans into 1 inch pieces and slit green chillies in halves.
     

  • Heat oil in a wide skillet and add mustard seeds.
     

  • After the mustard pops, add dried red chillies (cut in halves) and curry leaves.
     

  • When the dried chillies change color to dark brownish red, add the cut beans and green chillies.
     

  • Add turmeric and salt and mix well. Turmeric is added to keep the color of the beans.
     

  • Cover and cook for 3 or 4 mins.
     

  • Remove lid and stir well and cook till beans are cooked – beans should be a little crispy and not overcooked.
     

  • Serve hot with rice.

 
       
     
 
     
 
   

 

 

Note :
