Here is
the recipe for an easy stir fry of fresh & tender Okra (ladies
finger or Bhindi). It goes well with
rice or roti.

Okra/Ladies
Finger/Bhindi Fry
(Vendakka Varathathu) |

Ingredients : |
|
|
Tender Okra -
thinly sliced |
1 quart |
Mustard
|
1 tsp |
|
Green
chillies |
2 or 3 |
Curry leaves |
1 sprig |
|
Medium onion |
1 or 10 pearl
onions |
Oil |
1 tbsp |
|
Turmeric
Powder |
¼ tsp |
Salt |
to taste |
|

Preparation : |
|
-
Wash the okra and
pat dry, then slice them thinly. Slit green chillies
vertically in halves. Cut the onion in 4 and then thinly slice
it. If you have pearl onions add those instead - tastes better
(cut them in halves).

Heat oil in a wide
skillet and add mustard seeds.

After the mustard
pops, add curry leaves and sliced onion.

Saute the
onions till light brown.

Add the
sliced okra
and green chillies. Add turmeric and mix well.

Cook for
3 or 4 mins. Do NOT cover the pan.

Add salt
and stir well and cook till okra has browned and cooked well–
how well it is browned is a matter of preference. Some like it
on the lighter and tender side and some prefer it well browned.
I prefer a medium brown as shown in picture.

Serve hot with rice
or roti.
