Recipes - Veggies - Dry

 
 
 

Here is the recipe for an easy stir fry of fresh & tender Okra (ladies finger or Bhindi). It goes well with rice or roti.
 

 

 
 

Okra/Ladies Finger/Bhindi Fry
(Vendakka Varathathu)

 

 
     
 

String Bean Stir Fry

 
     
 
   

 

 

Ingredients :

 
Tender Okra - thinly sliced 1 quart Mustard

1 tsp

Green chillies 2 or 3 Curry leaves

1 sprig

Medium onion

1 or 10 pearl onions

Oil

1 tbsp

Turmeric Powder ¼ tsp Salt

to taste

     

 

 
     
     
 
     
 
   

 

 

Preparation :

 
  • Wash the okra and pat dry, then slice them thinly.  Slit green chillies vertically in halves. Cut the onion in 4 and then thinly slice it. If you have pearl onions add those instead - tastes better (cut them in halves).
     

  • Heat oil in a wide skillet and add mustard seeds.
     

  • After the mustard pops, add curry leaves and sliced onion.
     

  • Saute the onions till light brown.
     

  • Add the sliced okra and green chillies. Add turmeric and mix well.
     

  • Cook for 3 or 4 mins. Do NOT cover the pan.
     

  • Add salt and stir well and cook till okra has browned and cooked well– how well it is browned is a matter of preference. Some like it on the lighter and tender side and some prefer it well browned. I prefer a medium brown as shown in picture.
     

  • Serve hot with rice or roti.

 
       
     
 
     
 
   

 

 

Note :
